The name could use some work - "Folios" sounds like office supplies - but Lotito Foods' approach to low-carb bread alternatives has me right fired up. I haven't tried the cheese wraps yet (they're having trouble keeping them in stock, but keep checking Amazon Fresh) but I have tried coconut wraps. I give them 2 tongues down. With mild gagging sounds. Weird texture, and while I don't mind the taste of coconut, I don't want to taste it with my BLT.
Folios seem to be a less Frankenstein substitution for grains. They're made with real, aged cheese, and (should) taste like real cheese, and most things I'd like to have with bread I'd also like to have with cheese, so the swap makes more sense.
Folios are naturally lactose free and contain between 1 and 2 grams of carbs per wrap. Ingredients are pasteurized milk, salt, and the microbial enzymes needed for the cheesemaking process.
